Ingredients for Blueberry or Chocolate Muffins:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup plain yogurt or sour cream
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw)

Instructions for Blueberry Muffins:

  1. Preheat the oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing the muffin cups.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well mixed.
  3. In a separate bowl, cream together the melted butter and granulated sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the yogurt (or sour cream) and vanilla extract until the mixture is well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing; it’s okay if a few lumps remain. Gently fold in the blueberries.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Optionally, sprinkle a little sugar on top of each muffin before baking for a slightly crunchy texture.
  7. Bake the blueberry muffins for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
  8. Once done, allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Note: If you want to make chocolate muffins using the same recipe, replace the blueberries with 1 cup of semi-sweet chocolate chips and follow the same instructions, adjusting the baking time if needed.
